Giant Peanut Butter Cup

Servings: 1 | Prep: 5 min | Freezer Time: 20 min

INGREDIENTS

  • 1 rice cake, plain

  • 2 tbsp. chocolate of choice + 1/4 tsp coconut oil

  • 1 tbsp. peanut butter (or nut/seed butter or choice)

  • Pinch of salt

This Giant Peanut Butter Cup is perfect for an after-dinner dessert.

 

DIRECTIONS

  1. In a microwave safe bowl, melt chocolate and coconut oil for 30 seconds. Stir and microwave again for 30 seconds.

  2. Spread peanut butter over rice cake. Pour melted chocolate over the peanut butter and spread until evenly distributed. Sprinkle with salt.

  3. Place in freezer for 10 minutes or refrigerator for 20 minutes.
