Spinach & Feta Stuffed Mushrooms
Servings: 12 mushrooms | Prep: 15 min | Cook Time: 20 min
INGREDIENTS
1 tbsp. olive oil
2 cups fresh spinach, chopped
3 oz. feta cheese, crumbled
2 garlic cloves, minced
12 button mushrooms
These Spinach & Feta Stuffed Mushrooms make for the perfect appetizer for any get together.
DIRECTIONS
Preheat oven to 400 degrees.
Heat olive oil in a skillet/frying pan. Add spinach and sauté for about a minute before adding minced garlic. Stir constantly for a further minute or until the spinach is completely wilted. Remove from the heat.
Either clean the mushrooms with a damp cloth or peel their skin off.
In a small bowl, combine the sauteed spinach and crumbled feta (use a fork). Fill each mushroom with about a teaspoon of the filling.
Place the mushrooms onto a baking tray and bake for 20 minutes or until to your liking. Serve warm or cold.
