Garlic Parmesan Mini Chicken Meatloaves

INGREDIENTS

  • 1 lb. ground chicken

  • 1 egg

  • 1/3 cup parmesan cheese

  • 1/3 cup breadcrumbs

  • 3 garlic gloves, minced

  • 1 tsp. oregano

  • Salt and pepper

  • Topping:

    • 2 tbsp. Butter, melted

    • 2 garlic cloves, minced

    • 1 tsp. Oregano

    • Salt & pepper

    • ¼ cup mozzarella cheese, shredded

 

These Garlic Parmesan Mini Chicken Meatloaves make for the perfect weeknight meal.

 

DIRECTIONS

  1. Preheat oven to 375 degrees.

  2. In a large bowl, mix together ground chicken, egg, Parmesan cheese, breadcrumbs, minced garlic, oregano, salt, and black pepper.

  3. Shape the mixture into four mini loaves and place them on a baking sheet. Bake for 20-25 minutes.

  4. While that’s cooking combine the butter, garlic, oregano, salt and pepper.

  5. Remove the meatloaves from the oven. Brush with the butter mixture and then top with mozzarella cheese.

  6. Bake for an additional 2-3 minutes and then broil. Enjoy!
