Feta & Spinach Turkey Meatballs
Makes: 24 | Prep: 10 min | Cook Time: 20 minutes
INGREDIENTS
1 pound ground turkey
⅓ cup breadcrumbs, plain
1 egg large
½ cup feta cheese, crumbled
1 cup spinach, fresh
½ tsp. garlic powder
¼ tsp. pepper
¼ tsp. salt
These Feta & Spinach Turkey Meatballs are juicy, flavorful and great for meal prep or a quick weeknight dinner!
DIRECTIONS
Preheat oven to 400℉.
Roughly Chop the spinach. Heat a large skillet over medium, spray with cooking spray. Add the chopped spinach and a pinch of salt. Sauté the spinach until it has fully wilted, then remove it from the heat.
In a large bowl stir together the breadcrumbs, garlic powder, pepper, and salt. Lightly whisk the egg, then add the egg, ground turkey, sautéed spinach, and crumbled feta to the bowl with the breadcrumbs.
Use your hands to combine these ingredients until evenly mixed. Shape the meat mixture into balls, about one heaping tablespoon each. You should get approximately 24 meatballs.
Place on a prepared baking sheet and bake for 18 minutes.
