Baked Chicken Tacos
Makes: 16 Tacos | Prep: 20 min | Cook Time: 4 hours 25 minutes
INGREDIENTS
1.5 pounds boneless skinless chicken
8 oz. diced tomatoes with green chilies, can
1 taco seasoning packet
16 small flour tortilla shells
1 cup refried beans
2 cup cheddar cheese, shredded
Optional
Jalapeños, sliced or diced
Cilantro, chopped
Avocado, sliced
Guacamole
Olives, sliced
Sour cream or plain Greek yogurt
Salsa
Tomatoes, diced
Lettuce, shredded
These Baked Chicken Tacos are packed with seasoned chicken, refried beans, cheese and then cooked to give them a delicious crunch the entire family will love.
DIRECTIONS
Add chicken and diced tomatoes and green chilies to a crockpot. Turn on high for 4 hours or low for 6 hours. After the chicken is cooked shred it with two forks and add the packet of taco seasoning. Mix until everything is well combined.
Preheat oven to 425℉ and line a baking sheet (you may need two baking sheets) with foil or silicone mat.
Spray each tortilla with cooking spray and lay them flat on the baking sheet. Bake for 3 minutes. They should be soft and pliable.
Remove the tortillas from the oven. On one half of the tortilla add 1 tbsp. of refried beans followed by ¼ cup shredded chicken mix, followed by ½ oz. of shredded cheese. Fold the other half of the tortilla over the side with the food goodies.
Bake for 20 minutes, flipping halfway through.
Remove from the oven and add additional toppings. Enjoy!
