Easy Shrimp Egg Rolls

Servings: 16 egg rolls | Prep: 10 min | Cook Time: 15 min

INGREDIENTS

  • 1 lb. cooked shrimp, tails removed

  • Asian salad kit

  • 16 wonton wrappers

  • Asian dressing for dipping, optional

These Easy Shrimp Egg Rolls are made with three ingredients and when I say easy, I mean it!

 

DIRECTIONS

  1. Prepare salad kit in a large bowl. Cut the shrimp into small pieces and add them to the prepared salad kit. Still until well combined.

  2. Place an egg roll wrapper down to make a diamond shape. Add about 1/3 cup of mixture on the egg roll wrapper toward the top. Fold the top over. Then fold in both sides, making an “envelope” shape. Brush all the edges with water.

  3. Continue to roll the bottom of the envelope towards the top of the diamond, folding in the sides as needed. Brush water on the top of the egg roll flap to secure it and place seam side down.

  4. Lightly spray each egg roll with cooking spray prior to adding it to the air fryer. Place the egg rolls in an air fryer at 375° Fahrenheit. Make sure there is space between each egg roll, you may need to cook in batches. Cook for 6-8 minutes. Using tongs, flip and cook for an additional 5-7 minutes.

  5. Carefully remove the egg rolls from the air fryer. Serve with additional Asian dressing.
