Buffalo Chicken Stuffed Sweet Potatoes

Servings: 4 | Prep: 10 min | Cook Time: 10 min

INGREDIENTS

  • 1 lb. Boneless skinless chicken breast, cooked and shredded (feel free to use rotisserie chicken)

  • 4 medium sweet potatoes

  • 1/3 cup @sbrbbq buffalo wing sauce

  • 1 cup celery, diced

  • 2 oz. Blue cheese crumbles

  • 1/2 cup @bolthousefarms farms blue cheese dressing

  • Scallions, diced (optional)

These Buffalo Chicken Stuffed Sweet Potatoes are AMAZING!

 

DIRECTIONS

  1. Toss cooked shredded chicken with buffalo wing sauce. Set aside.

  2. Cook the sweet potatoes in the microwave wrapped in a damp paper towel or oven until fork tender. Cut open.

  3. Top each sweet potato with 1/4 of the chicken, 1/4 cup diced celery, 1/2 oz. blue cheese crumbles, 2 tbsp. blue cheese dressing and scallions (optional).

  4. Serve as carrot sticks or salad kit.
