Chipotle Steak Bowls

INGREDIENTS
Air Fryer Steak Bites
1 pound sirloin steak cut into ½ inch cubes
2 tbsp. olive oil
3-4 garlic cloves minced,
½ pepper
½ salt
handful of cilantro including steams
lime juice of
Vegetables
3 bell peppers variety of colors, cut into thin strips
1 red onion cut into strips
2 tbsp. olive oil divided
Seasoning for Peppers & Onions
1 ½ tsp. chili powder
1 tsp. cumin
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. paprika
¼ tsp. salt
⅛ tsp. pepper
Other Vegetables
½ cup corn kernels frozen or fresh
1 tomato diced
Optional
rice cooked
cheddar cheese shredded
avocado sliced
cilantro chopped
lime wedges
These Steak Bowls taste even better than the ones at Chipotle! Packed with seasoned steak bites, sauteed peppers and onions and a corn and tomato salsa.
DIRECTIONS
In a food processor or blender blend together the olive oil, cilantro, garlic cloves, salt, pepper and lime juice. In a medium bowl add the steak bites and the blended cilantro sauce.
Stir until the steak bites are well coated. Cover and place in fridge to marinate for at least 20 minutes. Heat air fryer to 400 degrees and cook the steak bites for 8-10 minutes.
In the meantime, in a medium bowl at 1 tbsp. olive oil, peppers, onions and the “seasonings for the peppers”. Toss until the peppers and onions are evenly coated.
In a large pan heat the other 1 tbsp. olive oil. Add the peppers and onions and heat until desired tenderness. Remove from pan and place aside.
In the same pan add the corn and tomatoes and cook until slightly charred.
Arrange bowl or plate with rice, steak bites, peppers and onions, corn and tomatoes, shredded cheese, avocado slices, cilantro, and lime wedges. Enjoy
