Chicken & Veggie Kabobs

Servings: 6 | Prep: 20 min | Marinade Time: 30 minutes | Cook Time: 20 min

INGREDIENTS

  • 1.5 lb. Boneless skinless chicken cut into equal size chunks

  • 2-3 bell peppers (multicolor), cut into chunks

  • 1-2 medium zucchini, sliced and then halved

  • 8 oz. whole mushrooms

  • 1 pint of grape tomatoes

  • 1 red onion, cut into chunks

  • Swap in or out any other preferred veggies!

  • Marinade of your choice, will alter nutrition profile

 

These Chicken & Veggie Kabobs are great for dinner or meal prep.

 

DIRECTIONS

  1. Marinade of your choice (I used BBQ sauce for the chicken) and this one for the veggie’s olive oil, citrus juice (lime or lemon) with some spices (garlic powder, cumin, salt, pepper, oregano).

  2. Place the chicken and veggies in separate bowls and add marinade for at least 20-30 minutes. If you’re using wooden skewers soak them in water for at least 20 minutes to prevent burning. I prefer metal skewers.

  3. Thread the chicken and veggies on the skewers.

  4. Place the skewers in a preheated grill and grill until the chicken is cooked through! Serve over rice, couscous, farro etc.
