Chicken Street Corn Pasta Salad

INGREDIENTS

  • 2 oz. (measured dry) Barilla protein plus pasta, cooked

  • 3 oz. Rotisserie chicken

  • 0.5 oz. Cotija cheese

  • 1/3 cup roasted corn (charred it in a pan, stovetop)

  • 1/4 cup red bell pepper, chopped

  • Jalapeños, minced

  • 2 tbsp. Cilantro avocado dressing

  • Cilantro, chopped

  • Fresh lime

  • Red onion - optional

 

This Chicken Street Corn Pasta Salad is so yummy and easy to make. Perfect as a meal or side dish. High in protein and fiber.

 

DIRECTIONS

  1. Mix all the ingredients together and enjoy!
