Chicken Spinach Artichoke Stuffed Potato

Servings: 1 | Prep: 10 min | Cook Time: 20 min

INGREDIENTS

  • 1 medium potato, cooked (to save time I cooked mine in the micro)

  • 2 tbsp. @aldiusa spinach artichoke dip

  • 1 @thelaughingcowusa cheese wedge

  • Handful of spinach, chopped

  • 1/4 cup artichoke hearts, chopped

  • 3 oz. cooked chicken, shredded

  • 1 oz. Mozzarella cheese, shredded

  • 1 tbsp. Parmesan cheese, grated

 

This Chicken Spinach Artichoke Stuffed Potato is so so good! Mouthwatering good.

 

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. In a large bowl combine the spinach artichoke dip, laughing cow cheese wedge, spinach, artichoke hearts and shredded chicken. Stir to combine.

  3. Cut the potato open but not all the way through. Place on prepared baking sheet. Top with spinach artichoke mixture and then top with shredded mozzerela cheese.

  4. Bake for 8-10 minutes. Broil for 2-3 minutes. Remove from oven and top with Parmesan cheese.
