Chicken pesto pasta bake

INGREDIENTS

  • 1 pound boneless skinless chicken breast cut into bite size pieces

  • 1 tbsp olive oil

  • 12 oz pasta dry, rigatoni or spirals

  • 4 oz basil pesto

  • 1 cup plain Greek yogurt

  • 10 oz frozen spinach thawed and liquid squeezed out

  • 1 pint cherry tomatoes halved

  • 1 cup part skim mozzarella cheese shredded

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp garlic powder

  • ¼ cup basil leaves roughly chopped, divided. optional

 

This Chicken Pesto Pasta Bake makes for the perfect easy weeknight dinner. Made with cooked chicken, spinach, basil pesto, pasta, tomatoes, and mozzarella, this flavorful meal is healthy and perfect for the entire family.

 

DIRECTIONS

  1. Preheat oven to 350° Fahrenheit. Prepare a large baking dish by spraying it with cooking spray, 9×13 inch. Set aside.

  2. In a large non-stick skillet, heat 1 tbsp. of olive oil and add in the pieces of chicken sprinkle with 1/4 tsp. salt and 1/4 tsp pepper. Sauté the chicken until golden on all sides and fully cooked through, about 6 minutes. Remove to a plate and set aside.

  3. In a large sauce pan bring water to a boil and add pasta. Cook pasta according to directions. Drain and set aside.

  4. In a small bowl whisk together the pesto, Greek yogurt, remaining salt and pepper, and garlic powder.

  5. Stir in the spinach to the pesto Greek yogurt mixture. Break it up as needed and stirring until evenly combined.

  6. To the prepared large baking dish, add in the pasta and pesto Greek yogurt mixture. Gently stir to coat the noodles.

  7. Add in the cooked chicken, tomatoes and ½ cup mozzarella cheese. Gently toss to combine.

  8. Sprinkle the remaining ½ cup mozzarella cheese over top of the pasta.

  9. Bake for 20-25 minutes until the cheese is melted. Feel free to broil at the end for 3-5 minutes. Add fresh chopped basil (optional) and serve with parmesan cheese.
