Chicken Caprese Panini

Servings: 1 | Prep: 5 min | Cook Time: 10 min

INGREDIENTS

  • 2 slices of bread (my favorite is seedtastic from Aldi, but sourdough also works great)

  • 3 oz. sliced chicken, cooked

  • 1 oz. fresh mozzarella cheese, sliced

  • 2-3 slices of tomato

  • 2 tsp. pesto

  • 2 tsp. aged balsamic glaze

  • Fresh basil, optional

This Chicken Caprese Panini is perfect for a quick lunch or a casual dinner.

 

DIRECTIONS

  1. Heat a grill pan, panini press or skillet over medium heat and spray with cooking spray.

  2. Assemble the panini. Add 2 tsp. of pesto to one slice of bread, add the sliced chicken, fresh mozzarella, tomato slices, drizzle with the aged balsamic and then add the fresh basil if using. Place the other slice of bread on top.

  3. Place the sandwich on the pan or press and cook for 3-4 minutes or until the bread is golden brown and crispy. If you’re using a grill pan or skillet, flip halfway.

  4. Remove from pan and serve!
