Shrimp Caesar Wrap

INGREDIENTS

  • 1 pound shrimp tails removed

  • 4 large tortilla shells

  • 4-5 cups kale

  • 1 lemon juice of

  • ¼ cup parmesan cheese freshly grated

  • 4 slices bacon chopped

  • ¼ cup Bolthouse farms Caesar dressing

  • Salt & pepper to taste

    Croutons

    • 2 slices bread cut into similar size cubes

    • 1 tbsp. spray olive oil

    • 1 tsp. Italian seasoning

    • 1 tsp. garlic powder

    • 1 tbsp. parmesan cheese grated

    • ½ tsp. salt

    • ¼ tsp. pepper

 

This Shrimp Caesar Wrap is stuffed with plump shrimp, kale, crispy bacon, parmesan cheese and homemade croutons. Tossed in a creamy Caesar dressing, this recipe is perfect for meal prep or a quick lunch.

 

DIRECTIONS

  1. Preheat oven to 375℉.

  2. Mix cubed bread, olive oil, Italian seasoning, garlic powder, Parmesan cheese, salt and pepper together until bread is well coated. Bake for 15 minutes, flipping halfway through.

  3. Massage kale with lemon or lime juice, salt and pepper for 5 minutes.

  4. Heat a skillet over medium heat. Spray with cooking spray. Add Shrimp and cook for 1-2 minutes on each side.

  5. In a large bowl combine kale, bacon, parmesan cheese, shrimp, croutons, and dressing.

  6. Place ¼ of shrimp kale mix in a wrap. Fold top over and the fold both sides in. Roll to close. Cut in half and enjoy!
