Sheet Pan Chicken Sausage, Peppers & Onions

Servings: 4 | Prep: 10 min | Cook Time: 30 min

INGREDIENTS

  • 3 bell peppers red, orange and yellow, thinly sliced

  • 1 white onion sliced

  • 2 tbsp. olive oil

  • 1 tsp. paprika

  • ½ tsp. cumin

  • ¼ tsp. pepper

  • ¼ tsp. salt

  • ¼ tsp. chili powder

Optional

  • Rice

  • Tortilla shells

  • Avocado sliced

  • Cheddar cheese shredded

 

Chicken Sausage baked on a sheet pan with peppers and onions to create a fast healthy weeknight sheet pan dinner recipe. Perfect to eat as is or serve or rice or in a wrap!

 

DIRECTIONS

  1. Preheat oven to 400° Fahrenheit. Prepare baking sheet by using a silicone mat or spraying foil with cooking spray.

  2. Toss peppers and onions with olive oil, paprika, cumin, chili powder, pepper and salt.

  3. Place the peppers and onions on the prepared baking sheet.

  4. Cook for 12-15 minutes, Remove the peppers and onions from oven. Add the sliced sausage to the pan and place back in the oven for an additional 12-15 minutes.

  5. Serve over rice or in a tortilla shell. Add your desired toppings.

  6. Enjoy!
