Pot Roast
Servings: 6 | Prep: 20 min | Cook Time: 4-6 hours
INGREDIENTS
3-pound, chuck roast
1 tbsp. olive oil
1 pound baby potatoes
3 cups baby carrots
1 yellow onion, sliced
1 cup beef broth
1 packet of onion soup mix
1 tsp. cornstarch
Salt
Pepper
This Pot Roast is the perfect cozy fall/winter meal the entire family will love.
DIRECTIONS
Season both sides of beef with salt and pepper. Heat olive oil in a pan over medium heat. Add chuck roast to pan and sear on both side for 5-7 minutes.
Place sliced onions on the bottom of the crockpot. Place the chuck roast on the onions. Top with the potatoes and carrots.
In a small bowl combine, beef broth, onion soup mix, and cornstarch. Whisk until combined. Pour over the beef, potatoes and carrots.
Cook on low for 6-8 hours or high for 4-6 hours. Enjoy!
