Pot Roast

Servings: 6 | Prep: 20 min | Cook Time: 4-6 hours

INGREDIENTS

  • 3-pound, chuck roast

  • 1 tbsp. olive oil

  • 1 pound baby potatoes

  • 3 cups baby carrots

  • 1 yellow onion, sliced

  • 1 cup beef broth

  • 1 packet of onion soup mix

  • 1 tsp. cornstarch

  • Salt

  • Pepper

This Pot Roast is the perfect cozy fall/winter meal the entire family will love.

 

DIRECTIONS

  1. Season both sides of beef with salt and pepper. Heat olive oil in a pan over medium heat. Add chuck roast to pan and sear on both side for 5-7 minutes.

  2. Place sliced onions on the bottom of the crockpot. Place the chuck roast on the onions. Top with the potatoes and carrots.

  3. In a small bowl combine, beef broth, onion soup mix, and cornstarch. Whisk until combined. Pour over the beef, potatoes and carrots.

  4. Cook on low for 6-8 hours or high for 4-6 hours. Enjoy!
