Pizza Stuffed Peppers
Makes: 8 halves | Prep: 20 minutes | Cook Time: 20 minutes
INGREDIENTS
1 pound 93% ground turkey
1 tbsp. olive oil
2 garlic cloves, minced
2 tsp. Italian seasoning
¼ tsp. salt
¼ tsp. pepper
1 14.5 oz diced tomatoes jar, do not drain
1 cup marinara sauce or pizza sauce
4 bell peppers, medium
2 oz pepperoni thinly sliced
1 cup mozzarella cheese, shredded
¼ cup black olives, optional
Red pepper flakes, optional
Stuffed Peppers are an easy, delicious dinner option, and when you combine them with pizza, they’re even better! Healthy, low-carb and packed with all the pizza flavors, I promise the entire family will love them!

Feel free to swap out the ground turkey for ground beef.
DIRECTIONS
Preheat oven to 400° Fahrenheit.
Heat olive oil in a large skillet over medium heat.
Add in ground turkey and garlic. Break the ground turkey up with a meat chopper or spoon. Heat until the ground turkey is cooked through and no longer pink, 6-8 minutes.
Add in Italian seasoning, salt and pepper, then stir in diced tomatoes.
Continue to simmer on medium-low heat for 8-10 minutes, or until the meat starts to absorb the juice from the diced tomatoes.
While the meat and diced tomato mixture is simmering prepare the bell peppers.
Cut the bell peppers length wise in half and remove the seeds and membranes.
Pour the marinara or pizza sauce onto the bottom of a 9×13-inch pan and spread out evenly with a spatula.
Arrange the peppers, cut side up and evenly distribute the meat mixture into them.
Sprinkle the filled peppers evenly with the mozzarella cheese. Add the pepperoni on top of the cheese followed by the olives.
Bake for 15-20 minutes or until cheese is melted.
Sprinkle with red pepper flakes (optional).
