Pesto Caprese Flatbread

Makes: 2 | Prep: 8 min | Cook Time: 12 minutes

INGREDIENTS

  • 1 Artisan flatbread

  • ½ cup plain Greek yogurt

  • ½ cup part skim ricotta cheese

  • ¼ cup pesto, classico is my favorite brand

  • 4 oz mozzarella cheese fresh, sliced

  • 1 Roma tomato, sliced

  • 2 tbsp. balsamic glaze

  • basil fresh, handful

 

This Pesto Caprese Flatbread is the perfect combo of basil pesto, tomatoes, fresh mozzarella and drizzle of balsamic vinegar for a fresh & delicious flatbread pizza.

 

DIRECTIONS

  1. Preheat oven to 425℉.

  2. Prepare a baking sheet with a silicone mat of foil/parchment paper sprayed with cooking spray. Add the flatbread to the pan. Set Aside.

  3. Combine the plain Greek yogurt, ricotta cheese, pesto and pepper in a small bowl. Spread the mixture evenly over the flatbread.

  4. Top with sliced mozzarella and sliced tomatoes.

  5. Bake for 10-12 minutes.

  6. Remove from the oven and top with fresh basil and balsamic glaze.

  7. Serve with a side salad. Enjoy!
