Mini Bell Pepper Nachos

Servings: 6 | Prep: 20 min | Cook Time: 10 min

INGREDIENTS

  • 1 lb. ground turkey

  • 1/2 packet Ortega low sodium taco mix

  • 21 mini multi color peppers, halved and seeded

  • 1 cup cheddar cheese, shredded

  • 1-2 jalapeños, sliced (optional)

  • 1 small jar black olives, sliced

  • Cilantro for garnish

These Mini Bell Pepper Nachos are a great appetizer for game day.

 

DIRECTIONS

  1. Preheat oven to 400 degrees.

  2. Cook ground turkey in medium pan until cooked through. Add taco seasoning and about 3/4 cup water. Stir and cover. Heat until liquid is absorbed.

  3. Place peppers on foil lined baking sheet. Cut side up. Fill each with cooked ground turkey. Top with cheese.

  4. Bake for 8-10 minutes. Remove from oven and top with jalapeños, black olives and garish. Serve with salsa, sour cream, or fat free plain Greek yogurt.
