Jerk Chicken Bowl

INGREDIENTS

  • 1 pound boneless skinless chicken breast cut into 6-8 tenders

  • ¼ cup Jerk seasoning homemade (recipe below)

  • 1 tbsp. olive oil divided

  • 2 bell peppers red

  • 1 avocado peeled and sliced

  • ¼ cup cilantro chopped

  • Jerk Seasoning

    • 1 tbsp. onion powder

    • 1 tbsp. garlic powder

    • 2 tsp. cayenne pepper

    • 2 tsp. salt

    • 2 tsp. pepper

    • 2 tsp. dried thyme

    • 2 tsp. brown sugar

    • 1 tsp. allspice

    • 1 tsp. dried parsley

    • 1 tsp. paprika

    • ½ tsp. hot pepper flakes

    • ½ tsp. cinnamon

    • ½ tsp. nutmeg

    • ½ tsp. clove

    • ¼ tsp. cumin

    • 1 tbsp. olive oil

    • 1 red bell pepper thinly sliced

  • Pineapple Mango Salsa

    • ½ cup pineapple diced

    • 1 mango diced

    • 2 tbsp. honey

    • 1 tbsp. lime juice

    • ½ tsp. pepper to taste

    • ¼ tsp. salt to taste

  • Cilantro Lime Rice

    • 2 cups jasmine rice cooked

    • 1 lime juice of

    • ¼ cup cilantro chopped

 

The Jerk Chicken Bowl is made with delicious, seasoned chicken over cilantro lime rice and topped with pineapple mango salsa.

 

DIRECTIONS

  1. Season chicken breasts all over with jerk seasoning. Add ½ tsp. olive oil to a large skillet over medium heat.

  2. Add chicken and cook for 4-5 minutes on each side, flipping once, until cooked through. Remove chicken from pan. Set aside.

  3. Add ½ tsp. olive oil to the same skillet over medium heat. Add bell peppers to the pan during the last few minutes of cooking and sauté until tender.

  4. Prepare pineapple mango salsa by combining all the ingredients to a bowl and mixing well.

  5. Prepare cilantro lime rice by combining all the ingredients to a bowl and mixing well.

  6. Spoon cilantro lime rice into bowls. Add chicken, bell pepper, pineapple mango salsa, sliced avocado and additional cilantro.

  7. Enjoy!
