English Muffin Breakfast Pizza

Servings: 1 | Prep: 5 min | Cook Time: 10 min

INGREDIENTS

  • 1 English muffin sliced in half

  • 2 eggs large

  • 1 ½ cup spinach

  • 2 tbsp. salsa

  • 1 oz part skim mozzarella cheese shredded

  • ¼ tsp. pepper

 

Who doesn't love pizza for breakfast? This English Muffin Breakfast Pizza makes for the perfect breakfast; quick, easy and healthy.

 

DIRECTIONS

  1. Broil the English muffin for 3-5 minutes until lightly toasted. Remove from oven and set aside.

  2. In a small bowl, whisk the eggs with pepper. Heat a pan over medium heat. Spray with cooking spray. Once the pan is hot, add the eggs. Cook the eggs until cooked through. Place cooked eggs in separate bowl and set aside.

  3. In the same pan you cooked the eggs in add additional cooking spray. Once the pan is hot, add the spinach. Sauté the spinach until wilted.

  4. Top the English muffin slices with spinach, scrambled eggs, salsa, and mozzarella. Return to oven and broil until the cheese is melted and golden brown. Enjoy!
