Air Fryer Taco Egg Rolls

Makes: 18 rolls | Prep: 15 min | Cook Time: 30 minutes

INGREDIENTS

  • 1 pound 93% ground turkey

  • 1 taco seasoning packet

  • 1 10 oz. diced tomatoes and green chilies, drained

  • 18-20 egg roll wrappers

  • 2.5 cups shredded cheese cheddar, taco or Mexican

  • cilantro, chopped

    Optional

    • guacamole

    • sour cream

    • salsa

 

Whether you're an egg roll fan or a taco fan, you will not be disappointed with these bad boys! These Air Fryer Tace Egg Rolls are packed with yummy taco flavor and perfect for dipping in your favorite sauce. Perfect for a game day appetizer or weeknight dinner meal with a side salad.

 

DIRECTIONS

  1. In a large non-stick skillet, spray with cooking spray and add in ground turkey. Brown until cooked through, around 5-6 minutes.

  2. 
Stir in the taco seasoning, add in the drained diced tomatoes and chilies and bring to a slight simmer for a minutes or so. Set aside.

  3. Place an egg roll wrapper down to make a diamond shape. Add about 2 tbsp. Shredded cheese on the egg roll wrapper toward the top. Scoop 1/4 cup of the taco mixture onto the cheese. Fold the top over. Then fold in both sides, making an "envelope" shape. Brush all the edges with water. Continue to roll the bottom of the envelope towards the top of the diamond, folding in the sides as needed. Brush water on the top of the egg roll flap to secure it and place seam side down.

  4. Lightly spray each egg roll with cooking spray prior to adding it to the air fryer.

  5. Place the egg rolls in an air fryer at 375° Fahrenheit. Make sure there is space between each egg roll, you may need to cook in batches. Cook for 6-8 minutes. Using thongs, flip and cook for an additional 5-7 minutes. 


  6. Carefully remove the egg rolls from the air fryer, top with cilantro. Serve with desired dipping sauces. Enjoy!
