3-Ingredient Cottage Cheese Pancakes

Makes: 8 pancakes | Prep: 5 minutes | Cook Time: 10 minutes

INGREDIENTS

  • 1 cup old fashioned oats

  • 1 cup cottage cheese

  • 4 large eggs

  • ¼ tsp. salt

  • 1 tsp. vanilla extract. optional

    Optional

    • Maple syrup

    • Jam

    • Sliced fruit

    • Peanut butter

    • Chocolate chips

    • Whipped cream

 

These 3-Ingredient Cottage Cheese Pancakes are fluffy, delicious and packed with protein. Believe me when I tell you these pancakes will be your new everyday breakfast favorite!

 

DIRECTIONS

  1. Place the oats, cottage cheese, eggs, salt and vanilla extract (if using) in a blender. Blend on high until all the ingredients are well combined, about 30 seconds.

  2. Heat a large nonstick pan over medium heat. Working in batches, add the batter in ¼ cup portions (recipe makes 8 pancakes), spacing them evenly apart. Cook until the pancakes are set around the edges and the batter starts to bubble in the middle. The bottom should be golden brown, about 2-3 minutes.

  3. Gently flip the pancakes with a spatula and cook until the other side is also golden brown, 1-2 minutes more. Transfer to plate.

  4. Repeat with the remaining 4 pancakes. Serve with your favorite pancake toppings; maple syrup, jam, sliced fruit, peanut butter, chocolate chips, or whipped cream.
