Lasagna Rolls with Spinach

Makes: 8 rolls | Prep: 20 min | Cook Time: 30 minutes

INGREDIENTS

  • 8 lasagna noodles, cooked

  • 1 egg large

  • 10 oz. frozen spinach, thawed and liquid squeezed out

  • 15 oz. part skim ricotta cheese

  • ½ cup parmesan cheese, grated

  • ½ cup part skim mozzarella cheese, shredded

  • 1 tsp. oregano

  • 1 tsp. pepper

  • ¼ tsp. salt

  • 24 oz. marinara sauce

 

These Lasagna Rolls with Spinach have a flavorful cheese filling. Enjoy lasagna without all of the layering! These lasagna rolls a delicious meatless meal that you can make ahead.

 

DIRECTIONS

  1. Preheat oven to 350℉. Prepare a 9×13 inch baking dish by spraying it with cooking spray and set it aside.

  2. Spoon about 1 cup of the marinara sauce on the bottom of the 9×13 inch pan. Spread the sauce out so it coats the entire bottom of the pan.

  3. In a medium bowl, combine the spinach, ricotta cheese, egg, oregano, pepper, and salt. Stir until everything is combined.

  4. Place a piece of parchment or wax paper on the counter and lay out the lasagna noodles. Make sure the noodles are dry. Spread ⅓ cup of ricotta mixture evenly over the noodle.

  5. Carefully roll and place seam side down onto the baking dish. Repeat with remaining lasagna noodles and mixture.

  6. Spoon the remaining marinara sauce over the noodles in the baking dish. Top with shredded mozzarella cheese.

  7. Cover with foil and bake for 25 minutes. Remove foil and broil for 3-5 minutes. Serve with a side veggie or salad. Enjoy!
