Healthy Turkey Chili

Servings: 12 | Prep: 15 min | Cook Time: 3-4 hours

INGREDIENTS

  • 2 lbs. 93/7 ground turkey

  • 1 medium yellow onion, diced

  • 2 garlic gloves finely chopped

  • 1 tbsp. Olive oil

  • 1 green pepper, diced

  • 3 cups water

  • 1 6 oz can tomato paste

  • 1 28 oz can crushed tomatoes

  • 1 15 oz can diced tomatoes

  • 2 15 oz cans black beans, rinsed

  • 2 cups frozen corn

  • 2 tbsp. Chili powder

  • 2 tsp. Cumin

  • Salt and pepper

 

Chili is a perfect make-ahead meal! It freezes well in airtight containers or freezer bags for up to 3 months. When you’re ready to enjoy it, simply thaw in the fridge overnight and reheat on the stove or in the microwave until hot. The flavors often get even better after sitting!

 

DIRECTIONS

  1. Add olive oil, onion and garlic to a large skillet and sauce 3-4 minutes until slightly tender.

  2. Add ground turkey and cook until done, crumbly and brown.

  3. Add the meat mixture to the crockpot or large pan.

  4. Add the remaining ingredients starting with the water. Stir until blended.

  5. Cover and cook on high for 3-4 hour, or 6-8 on low. Yields 12 servings. Cheese is optional.
