Easy Turkey Meatballs

Servings: 4 | Prep: 15 min | Cook Time: 35 min

INGREDIENTS

  • 1 pound ground turkey

  • ⅓ cup breadcrumbs plain

  • 1 egg large

  • ½ cup feta cheese crumbled

  • 1 cup spinach fresh

  • ½ tsp garlic powder

  • ¼ tsp pepper

  • ¼ tsp salt

  • 2 large broccoli crowns, cut into bite size pieces

  • 2 tbsp olive oil

  • Pepper to taste

  • 2 cups of cooked rice

 

These feta & spinach turkey meatballs are juicy, flavorful and great for meal prep or a quick weeknight dinner!

DIRECTIONS

  1. Preheat oven to 400° Fahrenheit.

  2. Roughly chop the spinach. Heat a large skillet over medium, spray with cooking spray. Add the chopped spinach and a pinch of salt. Sauté the spinach until it has fully wilted, then remove it from the heat.

  3. In a large bowl stir together the breadcrumbs, garlic powder, pepper, and salt. Lightly whisk the egg, then add the egg, ground turkey, sautéed spinach, and crumbled feta to the bowl with the breadcrumbs.

  4. Use your hands to combine these ingredients until evenly mixed. Shape the meat mixture into balls, about one heaping tablespoon each. You should get approximately 24 meatballs.

  5. Place on a prepared baking sheet and bake for 18 minutes.

  6. Once the meatballs are done cooking increase the oven temperature to 425° Fahrenheit.

  7. Toss the chopped broccoli with the olive oil and pepper.

  8. Place on a prepared baking sheet and bake for 12-15 minutes.

  9. To each (four) meal prep container add ½ cup cooked rice, ¼ of the broccoli and 6 meatballs.
