Broccoli Mac & Cheese

Servings: 6 | Prep: 10 min | Cook Time: 20 min

INGREDIENTS

  • 12 oz chickpea pasta or protein + pasta, cooked & drained

  • 2 tbsp. butter

  • ½ tbsp. flour

  • 2 garlic cloves minced

  • pepper

  • ⅓ cup chicken stock or vegetable

  • ¾ cup milk or milk alternative

  • ¾ cup half & half

  • ½ cup parmesan cheese grated

    Roasted Broccoli

    • 4 cups broccoli cut into bit size pieces

    • 1 tbsp. olive oil

    • pepper

 

This Broccoli Mac & Cheese is delicious and can be easily made with kitchen staples. It's made with chickpea pasta for a meatless meal made in 30 minutes.

 

DIRECTIONS

  1. Preheat oven to 400℉. Toss the broccoli with 1 tbsp. olive oil and pepper. Bake for 12-15 minutes.

  2. Remove the broccoli from the oven and set aside.

  3. Add the butter to a large pan over medium heat. Once melted add the flour. Let the butter and flour cook for 1-2 minutes stirring frequently. Add the garlic and ½ tsp. of pepper. Let cook for 30-40 seconds, stirring frequently. Stir in the vegetable broth.

  4. Let that simmer for 1 minute. Stir in the milk and the half & half, let it thicken for about 5 minutes, stirring occasionally. Stir in the grated parmesan and mix until smooth.

  5. Add the roasted broccoli and cooked pasta. Give everything a good stir and let it all heat for 3-4 minutes. Serve with additional parmesan cheese.

  6. Enjoy!
