Greek Tortellini Salad
Greek tortellini salad is a mix of cheese tortellini, cucumbers, olives, tomatoes, and feta cheese. all tossed in a Greek dressing. It makes for the perfect summer side dish or meatless main course!

- 8 oz. cheese tortellini
- ½ cup feta cheese crumbled
- ¾ cup cucumber diced
- ¾ cup grape tomatoes halved
- ¼ cup kalamata olives pitted and halved
- 2 tbsp. red onion diced
- ½ cup Greek dressing
- salt to taste
- pepper to taste
Cook the tortellini according to package directions. Drain and rinse under cool water.
Remove any excess water from the tortellini, then place in a large bowl. Add in the feta cheese, cucumbers, tomatoes, olives, red onion, Greek dressing, salt, and pepper.
Toss the salad to coat evenly.
Serve or chill the salad covered for an hour or two, to allow the flavors to marinate, then toss again and enjoy!
