Greek Tortellini Salad

Greek tortellini salad is a mix of cheese tortellini, cucumbers, olives, tomatoes, and feta cheese. all tossed in a Greek dressing. It makes for the perfect summer side dish or meatless main course!

Ingredients

  • 8 oz. cheese tortellini
  • ½ cup feta cheese crumbled
  • ¾ cup cucumber diced
  • ¾ cup grape tomatoes halved
  • ¼ cup kalamata olives pitted and halved
  • 2 tbsp. red onion diced
  • ½ cup Greek dressing
  • salt to taste
  • pepper to taste

Instructions

  • Cook the tortellini according to package directions. Drain and rinse under cool water.
  • Remove any excess water from the tortellini, then place in a large bowl. Add in the feta cheese, cucumbers, tomatoes, olives, red onion, Greek dressing, salt, and pepper.
  • Toss the salad to coat evenly.
  • Serve or chill the salad covered for an hour or two, to allow the flavors to marinate, then toss again and enjoy!
