- 1 cup old fashioned oats
- 1 cup cottage cheese
- 4 large eggs
- ¼ tsp salt
- 1 tsp vanilla extract optional
Optional
- maple syrup
- jam
- sliced fruit
- peanut butter
- chocolate chips
- whipped cream
Place the oats, cottage cheese, eggs, salt and vanilla extract (if using) in a blender. Blend on high until all the ingredients are well combined, about 30 seconds.
Heat a large nonstick pan over medium heat. Working in batches, add the batter in ¼ cup portions (recipe makes 8 pancakes), spacing them evenly apart. Cook until the pancakes are set around the edges and the batter starts to bubble in the middle. The bottom should be golden brown, about 2-3 minutes.
Gently flip the pancakes with a spatula and cook until the other side is also golden brown, 1-2 minutes more. Transfer to plate.
Repeat with the remaining 4 pancakes. Serve with your favorite pancake toppings; maple syrup, jam, sliced fruit, peanut butter, chocolate chips, or whipped cream.
