These 3-Ingredient Cottage Cheese Pancakes are fluffy, delicious and packed with protein. Believe me when I tell you they will be your new everyday breakfast favorite!

Ingredients

  • 1 cup old fashioned oats
  • 1 cup cottage cheese
  • 4 large eggs
  • ¼ tsp salt
  • 1 tsp vanilla extract optional

Optional

  • maple syrup
  • jam
  • sliced fruit
  • peanut butter
  • chocolate chips
  • whipped cream

Instructions

  • Place the oats, cottage cheese, eggs, salt and vanilla extract (if using) in a blender. Blend on high until all the ingredients are well combined, about 30 seconds.
  • Heat a large nonstick pan over medium heat. Working in batches, add the batter in ¼ cup portions (recipe makes 8 pancakes), spacing them evenly apart. Cook until the pancakes are set around the edges and the batter starts to bubble in the middle. The bottom should be golden brown, about 2-3 minutes.
  • Gently flip the pancakes with a spatula and cook until the other side is also golden brown, 1-2 minutes more. Transfer to plate.
  • Repeat with the remaining 4 pancakes. Serve with your favorite pancake toppings; maple syrup, jam, sliced fruit, peanut butter, chocolate chips, or whipped cream.
