Tacos, one of the most popular dinner meals in our house. Is this the case in anyone else’s house? Since we all love tacos why not make bite size taco cups? Genius idea!
What you need to Make Taco Cups
Ground Turkey – We prefer ground turkey in our house, 93/7. But you can use ground beef or ground chicken or a mixture of the three.
Fire Roasted Tomatoes – This is one our my pantry staples because a can of fire roasted tomatoes can spice up any recipe. Fire roasted tomatoes are exactly what they sound like, tomatoes that are charred over a flame before they’re diced and canned (sometimes, they’re also enhanced with onion and garlic powder).
Corn – Fresh or frozen. I typically use frozen corn because its easier and usually always have a bag on hand. But in my opinion I think grilled corn would be the best in the recipe!
Taco Seasoning Packet – Low sodium taco seasoning is what I use. If I’m feeling up to it I’ll make a batch of homemade taco seasoning.
- 1/4 cup Chili Powder
- 2 tbsp. Onion Powder
- 1 tbsp. Cumin
- 1 tbsp. Garlic powder
- 1/2 tbsp. Paprika
- 1/2 tbsp. Salt
- 1/2 tbsp. pepper
Cheese – Mexican blend works best but cheddar works just fine. I mean can you really go wrong with cheese?
How to Make Taco Cups
In a medium saucepan heat ground turkey until browned. Remove from heat. Add taco seasoning packet, fire roasted diced tomatoes and corn. Stir until well combined.

Spray a small muffin tin with cooking spray. You will either need two small muffin tins or one and cook in two different batches. Line each cup with 1 wonton wrap.

Spoon about 1 ½ tablespoon of ground turkey mixture into each wonton wrap. Repeat until 40 wraps are filled.

Top each taco cup with shredded cheese.

Bake for 12-15 minutes until heated through and the edges are golden. Top with your favorite toppings.

- 1 lb. ground turkey 93/7
- 1 14.5 oz. can fire roasted diced tomatoes not drained
- 1 cup corn fresh or frozen
- 1 taco seasoning packet
- 1 cup Mexican blend cheese shredded
Optional Toppings:

- plain Greek yogurt
