This Spinach Macaroni & Cheese is so cheesy and delicious you'll never want to make boxed macaroni & cheese again. The entire family will love it!

Ingredients

  • 12 oz. elbow macaroni dry
  • 2 tbsp. butter
  • 3 tbsp. flour
  • 2 cups milk
  • 1 cup chicken broth low sodium
  • ½ cup part skim mozzarella cheese shredded
  • ½ cup cheddar cheese shredded
  • 10 oz. frozen spinach thawed and water squeezed out
  • ½ cup seasoned bread crumbs
  • pepper to taste
  • salt to taste

Instructions

  • Preheat oven to 375℉.
  • Cook pasta according to directions. Set aside.
  • In a large pan melt butter. Add flour and cook over low heat stirring with a whisk. Add milk and chicken broth and continue whisking, until it comes to a boil and becomes smooth and thick.
  • Season with salt and pepper. Once it becomes thick, remove from heat, add 3/4 cup of shredded cheese (1/4 cup at a time) and mix well until cheese is melted. Adjust salt and pepper to taste.
  • Add cooked macaroni and spinach. Pour into baking dish.
  • Top with 1/4 cup of remaining shredded cheese, grated cheese and breadcrumbs.
  • Bake for 15-20 minutes. Broil for a few minutes to get the breadcrumbs golden.
  • Remove from oven and enjoy!
