Ingredients

  • 1.5 lbs. shrimp tails removed
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 1 tbsp. olive oil
  • 12 small corn tortillas
  • 1 14.5 oz. can refried beans fat free
  • 1 cup guacamole
  • 1 cup cheddar cheese shredded
  • ¾ cup cilantro avocado yogurt dressing

Optional

  • pickled onions
  • jalapeños sliced
  • cilantro chopped
  • avocado diced
  • lime wedges

Instructions

  • Preheat oven to 400 ℉. Spray both sides of the corn tortillas with cooking spray. Bake for 4-5 minutes.
  • Spray both sides of the corn tortillas with cooking spray. Bake for 4-5 minutes. Flip and bake for an additional 4-5 minutes.
  • Make sure the shrimp is dry. Season with garlic powder, paprika, and chili powder. Heat a pan with 1 tbsp. Olive oil. Add the shrimp and sauté for 1-2 minutes on each side.
  • Heat refried beans and start to assemble your tostadas.
  • Layer beans, guacamole, shrimp, cheese, then top with pickled red onions, jalapeños, cilantro, avocado, lime wedges and drizzle with cilantro avocado dressing. Enjoy!
