These Shrimp Tostadas are the perfect weeknight meal. Crunchy corn tortillas topped refried beans, creamy guacamole, shrimp, shredded cheese and a creamy cilantro lime dressing.

Ingredients
- 1.5 lbs. shrimp tails removed
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1 tsp. chili powder
- 1 tbsp. olive oil
- 12 small corn tortillas
- 1 14.5 oz. can refried beans fat free
- 1 cup guacamole
- 1 cup cheddar cheese shredded
- ¾ cup cilantro avocado yogurt dressing

- jalapeños sliced
- cilantro chopped
- avocado diced
- lime wedges
Instructions
- Preheat oven to 400 ℉. Spray both sides of the corn tortillas with cooking spray. Bake for 4-5 minutes.
- Spray both sides of the corn tortillas with cooking spray. Bake for 4-5 minutes. Flip and bake for an additional 4-5 minutes.
- Make sure the shrimp is dry. Season with garlic powder, paprika, and chili powder. Heat a pan with 1 tbsp. Olive oil. Add the shrimp and sauté for 1-2 minutes on each side.
- Heat refried beans and start to assemble your tostadas.
- Layer beans, guacamole, shrimp, cheese, then top with pickled red onions, jalapeños, cilantro, avocado, lime wedges and drizzle with cilantro avocado dressing. Enjoy!
