This Shrimp Fried Rice on the Blackstone is a quick and easy meal that's perfect for busy weeknights and the entire family will love it, I promise!

Ingredients

  • 1.5 lbs. shrimp tailed removed
  • 3 tbsp. butter
  • 2 cups cooked rice cooled
  • 2 eggs
  • 3 tbsp. low sodium soy sauce
  • salt
  • pepper
  • 12 oz. bag of peas and corn

Instructions

  • Heat the Blackstone to high. Add 1/2 the butter to the griddle, let it melt and then use your spatula to spread it around.
  • Then add in the peas and carrots mix onto the griddle. Sauté the vegetables for 3-5 minutes until the vegetables are soft. Move the vegetables to the cooler side of the griddle.
  • Add the remaining butter and then add the beaten eggs on the griddle. Scramble the eggs. Move the eggs to the cooler side of the griddle with the vegetables.
  • Then add the shrimp and sauté the shrimp for 1-2 minutes until the shrimp is pink and cooked through. Then move the shrimp to the cooler side of the griddle with the eggs and vegetables.
  • Then pour the cooked rice onto the griddle and top it with the soy sauce, salt and pepper. Sauté the rice on the griddle for 3-4 minutes until heated through and slightly browned. Enjoy!

Notes

This meal is completely customizable. Swap out shrimp for chicken, steak or go meatless!
