Ingredients

  • 1 pound shrimp tails removed
  • 4 large tortilla shells
  • 4-5 cups kale
  • 1 lemon juice of
  • ¼ cup parmesan cheese freshly grated
  • 4 slices bacon chopped
  • ¼ cup Bolthouse farms Caesar dressing
  • salt to taste
  • pepper to taste

Croutons

  • 2 slices bread cut into similar size cubes
  • 1 tbsp. olive oil spray it on
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1 tbsp. parmesan cheese grated
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

  • Preheat oven to 375℉.
  • Mix cubed bread, olive oil, Italian seasoning, garlic powder, Parmesan cheese, salt and pepper together until bread is well coated. Bake for 15 minutes, flipping halfway through.
  • Massage kale with lemon or lime juice, salt and pepper for 5 minutes.
  • Heat a skillet over medium heat. Spray with cooking spray. Add Shrimp and cook for 1-2 minutes on each side.
  • In a large bowl combine kale, bacon, parmesan cheese, shrimp, croutons, and dressing.
  • Place ¼ of shrimp kale mix in a wrap. Fold top over and the fold both sides in. Roll to close. Cut in half and enjoy!
