This simple and colorful mango salsa is super easy to make! It’s sweet, spicy and absolutely delicious. Serve it over flaky salmon and you have the perfect weeknight dinner meal.

Ingredients
- 16 oz. salmon cut into 4, 4oz. filets
- 1 mango large, peeled and diced
- 1 red bell pepper diced
- 1 red onion small, chopped
- 1 avocado large, peeled and diced
- 1 jalapeño minced
- ¼ cup cilantro chopped
- 1 lime juice of
- 2 tbsp. olive oil
- ½ tsp. pepper
- ¼ tsp. salt
- salt and pepper for the salmon
Optional
- rice, farro, quinoa, barley cooked
Instructions
- Preheat oven to 400℉.
- Cut the salmon into 4, 4 oz. equal sized pieces.
- Place salmon on prepared baking sheet pan and sprinkle with salt and pepper. Cook salmon for 12-15 minutes or until the salmon is cooked to your liking.
- While the salmon is cooking. In a medium bowl add the diced mango, diced bell pepper, chopped onion, minced jalapeño, chopped cilantro, lime juice, olive oil, salt and pepper. Mix until well combined.
- Gently fold in the diced avocado. Feel free to make the salsa ahead of time and let it sit in the fridge for a few hours to soak up all the flavors.
- Prepare the plate, using rice, farro, quinoa, barley, a lettuce base or just the salmon. Place the salmon down and top with the salsa.
