Ingredients

  • 16 oz. salmon cut into 4, 4oz. filets
  • 1 mango large, peeled and diced
  • 1 red bell pepper diced
  • 1 red onion small, chopped
  • 1 avocado large, peeled and diced
  • 1 jalapeño minced
  • ¼ cup cilantro chopped
  • 1 lime juice of
  • 2 tbsp. olive oil
  • ½ tsp. pepper
  • ¼ tsp. salt
  • salt and pepper for the salmon

Optional

  • rice, farro, quinoa, barley cooked

Instructions

  • Preheat oven to 400℉.
  • Cut the salmon into 4, 4 oz. equal sized pieces.
  • Place salmon on prepared baking sheet pan and sprinkle with salt and pepper. Cook salmon for 12-15 minutes or until the salmon is cooked to your liking.
  • While the salmon is cooking. In a medium bowl add the diced mango, diced bell pepper, chopped onion, minced jalapeño, chopped cilantro, lime juice, olive oil, salt and pepper. Mix until well combined.
  • Gently fold in the diced avocado. Feel free to make the salsa ahead of time and let it sit in the fridge for a few hours to soak up all the flavors.
  • Prepare the plate, using rice, farro, quinoa, barley, a lettuce base or just the salmon. Place the salmon down and top with the salsa.
  • Enjoy!
