This Pesto Caprese Flatbread is the perfect combo of basil pesto, tomatoes, fresh mozzarella and drizzle of balsamic vinegar for a fresh & delicious flatbread pizza.

Ingredients

  • 1 Artisan flatbread
  • ½ cup plain Greek yogurt
  • ½ cup part skim ricotta cheese
  • ¼ cup pesto classico is my favorite brand
  • 4 oz mozzarella cheese fresh, sliced
  • 1 roma tomato sliced
  • 2 tbsp. balsamic glaze
  • basil fresh, handful

Instructions

  • Preheat oven to 425℉.
  • Prepare a baking sheet with a silicone mat of foil/parchment paper sprayed with cooking spray. Add the flatbread to the pan. Set Aside.
  • Combine the plain Greek yogurt, ricotta cheese, pesto and pepper in a small bowl. Spread the mixture evenly over the flatbread.
  • Top with sliced mozzarella and sliced tomatoes.
  • Bake for 10-12 minutes.
  • Remove from the oven and top with fresh basil and balsamic glaze.
  • Serve with a side salad. Enjoy!
