Ingredients

  • 1 pound ground turkey 93/7
  • 1 egg large
  • ½ cup breadcrumbs plain
  • ½ cup feta cheese crumbled
  • 1 ½ cup spinach chopped
  • ¼ cup sun dried tomatoes in oil, chopped
  • 1 tbsp sun dried tomato oil
  • 1 tsp garlic powder
  • ½ tsp pepper
  • ¼ tsp salt
  • tzatziki optional

Instructions

  • Preheat oven to 350℉. Prepare a loaf pan by spraying it with cooking spray. Set aside.
  • In a large bowl combine, ground turkey, egg, breadcrumbs, feta cheese, chopped spinach, chopped sun dried tomatoes, sun dried tomato oil, salt, pepper, and garlic powder.
  • Mix until well combined either with a spoon or clean hands.
  • Dump the ground turkey mixture into the prepared pan. Evenly distribute the mixture into the pan.
  • Bake for 40-45 minutes. Let sit for 5-10 minutes before slicing.
  • Serve with tzatziki and choice of veggies (side salad or roasted veggies would be my choice).
