This Mediterranean Meatloaf bursting with flavor. It’s low carb and lightened up using ground turkey. Make it ahead for an easy healthy dinner during the week or freeze.

Ingredients
- 1 pound ground turkey 93/7
- 1 egg large
- ½ cup breadcrumbs plain
- ½ cup feta cheese crumbled
- 1 ½ cup spinach chopped
- ¼ cup sun dried tomatoes in oil, chopped
- 1 tbsp sun dried tomato oil
- 1 tsp garlic powder
- ½ tsp pepper
- ¼ tsp salt
- tzatziki optional
Instructions
- Preheat oven to 350℉. Prepare a loaf pan by spraying it with cooking spray. Set aside.
- In a large bowl combine, ground turkey, egg, breadcrumbs, feta cheese, chopped spinach, chopped sun dried tomatoes, sun dried tomato oil, salt, pepper, and garlic powder.
- Mix until well combined either with a spoon or clean hands.
- Dump the ground turkey mixture into the prepared pan. Evenly distribute the mixture into the pan.
- Bake for 40-45 minutes. Let sit for 5-10 minutes before slicing.
- Serve with tzatziki and choice of veggies (side salad or roasted veggies would be my choice).
