These Lasagna Rolls with Spinach have a flavorful cheese filling. Enjoy lasagna without all of the layering! These lasagna rolls a delicious meatless meal that you can make ahead.
Ingredients
- 8 lasagna noodles cooked
- 1 egg large
- 10 oz. frozen spinach thawed and liquid squeezed out
- 15 oz. part skim ricotta cheese
- ½ cup parmesan cheese grated
- ½ cup part skim mozzarella cheese shredded
- 1 tsp. oregano
- 1 tsp. pepper
- ¼ tsp. salt
- 24 oz. marinara sauce
Instructions
- Preheat oven to 350℉. Prepare a 9×13 inch baking dish by spraying it with cooking spray and set it aside.
- Spoon about 1 cup of the marinara sauce on the bottom of the 9×13 inch pan. Spread the sauce out so it coats the entire bottom of the pan.
- In a medium bowl, combine the spinach, ricotta cheese, egg, oregano, pepper, and salt. Stir until everything is combined.
- Place a piece of parchment or wax paper on the counter and lay out the lasagna noodles. Make sure the noodles are dry. Spread ⅓ cup of ricotta mixture evenly over the noodle.
- Carefully roll and place seam side down onto the baking dish. Repeat with remaining lasagna noodles and mixture.
- Spoon the remaining marinara sauce over the noodles in the baking dish. Top with shredded mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and broil for 3-5 minutes. Serve with a side veggie or salad. Enjoy!
