The Jerk Chicken Bowl is made with delicious, seasoned chicken over cilantro lime rice and topped with pineapple mango salsa.

Ingredients
- 1 pound boneless skinless chicken breast cut into 6-8 tenders
- ¼ cup Jerk seasoning homemade (recipe below)
- 1 tbsp. olive oil divided
- 2 bell peppers red
- 1 avocado peeled and sliced
- ¼ cup cilantro chopped
Jerk Seasoning
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 2 tsp. cayenne pepper
- 2 tsp. salt
- 2 tsp. pepper
- 2 tsp. dried thyme
- 2 tsp. brown sugar
- 1 tsp. allspice
- 1 tsp. dried parsley
- 1 tsp. paprika
- ½ tsp. hot pepper flakes
- ½ tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. clove
- ¼ tsp. cumin
- 1 tbsp. olive oil
- 1 red bell pepper thinly sliced
Pineapple Mango Salsa
- ½ cup pineapple diced
- 1 mango diced
- 2 tbsp. honey
- 1 tbsp. lime juice
- ½ tsp. pepper to taste
- ¼ tsp. salt to taste
Cilantro Lime Rice
- 2 cups jasmine rice cooked
- 1 lime juice of
- ¼ cup cilantro chopped
Instructions
- Season chicken breasts all over with jerk seasoning. Add ½ tsp. olive oil to a large skillet over medium heat.
- Add chicken and cook for 4-5 minutes on each side, flipping once, until cooked through. Remove chicken from pan. Set aside.
- Add ½ tsp. olive oil to the same skillet over medium heat. Add bell peppers to the pan during the last few minutes of cooking and sauté until tender.
- Prepare pineapple mango salsa by combining all the ingredients to a bowl and mixing well.
- Prepare cilantro lime rice by combining all the ingredients to a bowl and mixing well.
- Spoon cilantro lime rice into bowls. Add chicken, bell pepper, pineapple mango salsa, sliced avocado and additional cilantro.
