Ingredients

  • 1 pound boneless skinless chicken breast cut into 6-8 tenders
  • ¼ cup Jerk seasoning homemade (recipe below)
  • 1 tbsp. olive oil divided
  • 2 bell peppers red
  • 1 avocado peeled and sliced
  • ¼ cup cilantro chopped

Jerk Seasoning

  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 2 tsp. cayenne pepper
  • 2 tsp. salt
  • 2 tsp. pepper
  • 2 tsp. dried thyme
  • 2 tsp. brown sugar
  • 1 tsp. allspice
  • 1 tsp. dried parsley
  • 1 tsp. paprika
  • ½ tsp. hot pepper flakes
  • ½ tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. clove
  • ¼ tsp. cumin
  • 1 tbsp. olive oil
  • 1 red bell pepper thinly sliced

Pineapple Mango Salsa

  • ½ cup pineapple diced
  • 1 mango diced
  • 2 tbsp. honey
  • 1 tbsp. lime juice
  • ½ tsp. pepper to taste
  • ¼ tsp. salt to taste

Cilantro Lime Rice

  • 2 cups jasmine rice cooked
  • 1 lime juice of
  • ¼ cup cilantro chopped

Instructions

  • Season chicken breasts all over with jerk seasoning. Add ½ tsp. olive oil to a large skillet over medium heat.
  • Add chicken and cook for 4-5 minutes on each side, flipping once, until cooked through. Remove chicken from pan. Set aside.
  • Add ½ tsp. olive oil to the same skillet over medium heat. Add bell peppers to the pan during the last few minutes of cooking and sauté until tender.
  • Prepare pineapple mango salsa by combining all the ingredients to a bowl and mixing well.
  • Prepare cilantro lime rice by combining all the ingredients to a bowl and mixing well.
  • Spoon cilantro lime rice into bowls. Add chicken, bell pepper, pineapple mango salsa, sliced avocado and additional cilantro.
  • Enjoy!
