Ingredients

Meatballs

  • 1 pound ground turkey 93/7
  • cup feta cheese
  • ½ cup spinach fresh, chopped
  • ¼ cup bread crumbs plain
  • 1 large egg
  • 2 tbsp. sundried tomatoes chopped
  • 1 tbsp. nonfat Greek yogurt plain
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • salt to taste
  • pepper to taste

Toppings

  • ½ cup Feta cheese
  • 1 English cucumber diced
  • 1 cup grape tomatoes halved or quartered
  • 1 bell pepper diced
  • ½ red onion sliced
  • ½ cup kalamata olives
  • ½ cup tzatziki

Optional

  • rice, couscous or farro

Instructions

  • Preheat oven to 400℉. Line a baking sheet with a silicone mat or with parchment paper.
  • In a large bowl, combine the ground turkey, feta cheese, spinach, breadcrumbs, egg, Greek yogurt, sun-dried tomatoes, and spices.
  • Use hands to combine all the ingredients. Form into 12 equal size balls. Place the meatballs evenly spaced on the prepared baking sheet.
  • Bake for 18-20 minutes.
  • Remove from oven and arrange bowl. Rice, meatballs, feta cheese, cucumber, tomatoes, bell peppers, onions, olives, and tzatziki.
  • Enjoy!
