Ingredients
- 16 oz. pizza dough
- ½ pound boneless skinless chicken breast cooked, cubed
- 1 tbsp. butter
- 2 cloves garlic minced
- 1 tbsp. all-purpose flour
- ½ cup milk
- ¼ cup half and half
- ¼ tsp. salt
- ¼ tsp. pepper
- ⅛ tsp. paprika
- 1 oz. lite cream cheese softened
- 3 tbsp. parmesan cheese grated, divided into 2 tbsp. & 1 tbsp.
- 1 ½ cup Italian cheese blend shredded
- 2 cups spinach coarsely chopped
- 12 oz. artichokes drained and coarsely chopped, (not marinated)
- 1 tbsp. parmesan cheese grated
Instructions
- Preheat oven to 450℉.
- In a medium saucepan melt butter. Add the garlic and cook, stirring frequently for about 1 minute. Whisk in flour and cook for about 1 minute. Make sure to whisk until there are no visible clumps of flour.
- Gradually whisk in milk, half and half, salt, pepper and paprika. As the sauce thickens, turn heat up to medium and cook for 2-3 minutes. Whisk in the cream cheese and 2 tbsp. parmesan until melted, about 1-2 minutes. Remove from the heat and allow to cool.
- Roll out the pizza dough into a 14-inch circle. Transfer to a pizza pan. Fork the center of the pizza to prevent large bubbles from forming. Place in the oven and bake for 5-7 minutes, remove and set aside.
- Spread the sauce over top, then half of the Italian cheese blend. Add the chicken, spinach and artichoke, then top with remaining Italian cheese blend.
- Place in the oven and bake for 7-10 minutes or until the crust is golden brown, and the cheese is melted. Remove from the oven and allow to cool for 5 minutes, then sprinkle with shaved parmesan and grated parmesan. Allow to cool for 2-3 additional minutes, then cut and serve.
- Enjoy!
