Ingredients

  • 2 tortilla shells
  • ½ bell pepper chopped, or any other veggies of choice (mushrooms, broccoli, spinach, tomatoes or a combo)
  • 2 eggs large
  • ¼ cup cheese shredded
  • salt
  • pepper

Optional

  • salsa
  • guacamole
  • sour cream
  • Greek yogurt plain

Instructions

  • Heat a small-medium pan with cooking spray, add the bell pepper (or veggie of choice). Sauté for a few minutes or until veggies are tender crisp.
  • In a small bowl whisk egg, salt and pepper.
  • Add the eggs to the pan with the veggies and continue to cook until eggs are cooked through.
  • Spray quesadilla maker with cooking spray. Place a tortilla shell down, top with 2 tbsp. of cheese, then the egg and veggie mixture, followed by the remaining 2 tbsp. of cheese. Cover with the other tortilla shell.
  • Close the quesadilla maker and cook until golden brown.
  • Cut into triangles and serve with your favorite toppings!
  • Enjoy!
