This Breakfast Quesadilla is packed with eggs and your choice of veggies and cheese. Perfect for breakfast, brunch and even dinner!

Ingredients
- 2 tortilla shells
- ½ bell pepper chopped, or any other veggies of choice (mushrooms, broccoli, spinach, tomatoes or a combo)
- 2 eggs large
- ¼ cup cheese shredded
- salt
- pepper
Optional
- salsa
- guacamole
- sour cream
- Greek yogurt plain
Instructions
- Heat a small-medium pan with cooking spray, add the bell pepper (or veggie of choice). Sauté for a few minutes or until veggies are tender crisp.
- In a small bowl whisk egg, salt and pepper.
- Add the eggs to the pan with the veggies and continue to cook until eggs are cooked through.
- Spray quesadilla maker with cooking spray. Place a tortilla shell down, top with 2 tbsp. of cheese, then the egg and veggie mixture, followed by the remaining 2 tbsp. of cheese. Cover with the other tortilla shell.
- Close the quesadilla maker and cook until golden brown.
- Cut into triangles and serve with your favorite toppings!
