Ingredients

  • 1 pound boneless skinless chicken breast cut into bite size pieces
  • ½ cup BBQ sauce
  • 1 cup jasmine rice cooked
  • corn kernels fresh or frozen
  • black beans rinsed and drained
  • 2 cups romaine lettuce chopped
  • ½ cup cheese shredded
  • cup tomatoes diced
  • 1 avocado diced
  • 1 lime wedges
  • ¼ cup cilantro chopped
  • ½ cup salsa

Instructions

  • In a Ziplock bag add the chicken and BBQ sauce. Make sure all the chicken is coated with the sauce. Optional, place in the refrigerator for at 15 minutes before cooking.
  • You could also grill the chicken if preferred and then cut into bite size pieces.
  • Heat a non-stick pan with cooking spray. Add the BBQ chicken and cooked until the chicken is cooked through, 8-10 minutes.
  • While the chicken is cooking prepare the other ingredients.
  • Arrange the bowl with ¼ of all the ingredients. Top with an additional desired toppings. Enjoy!
