These Air Fryer Chicken Egg Rolls are a versatile dish that you can make as an appetizer, snack, quick lunch or main meal. This air fryer recipe makes it quick and so easy.

Ingredients
- 1 pound ground chicken
- 2 tsp. garlic powder
- 1 tsp. ground ginger
- 1 tbsp. soy sauce
- salt
- pepper
- 2 cups cabbage shredded (combo green and purple)
- 1 cup carrots shredded
- 1 green onion thinly sliced
- 14 egg roll wrappers
- 1 tbsp. water
Instructions
- In a large non-stick skillet, spray with cooking spray and add in the ground chicken. Crumble and brown chicken until thoroughly cooked.
- Season with garlic powder, ground ginger, soy sauce, salt and pepper.
- Add the shredded cabbage, carrots and sliced green onion to the chicken and stir to combine. Continue to stir-fry for 5 minutes or until mixture is heated. Turn off heat and remove skillet from burner.
- Place an egg roll wrapper down to make a diamond shape. Add about ⅓ cup of mixture on the egg roll wrapper toward the top. Fold the top over. Then fold in both sides, making an "envelope" shape. Brush all the edges with water. Continue to roll the bottom of the envelope towards the top of the diamond, folding in the sides as needed. Brush water on the top of the egg roll flap to secure it and place seam side down.
- Lightly spray each egg roll with cooking spray prior to adding it to the air fryer.
- Place the egg rolls in an air fryer at 375° Fahrenheit. Make sure there is space between each egg roll, you may need to cook in batches. Cook for 6-8 minutes. Using thongs, flip and cook for an additional 5-7 minutes.
- Carefully remove the egg rolls from the air fryer. Serve with your favorite dipping sauce (sweet & sour sauce, bang bang sauce, sweet chili sauce, soy sauce etc.)
